Ingredients
Makes 4 servings. Macros above are per serving.
- 1 lb (450g) lean ground beef (90/10)
- 1 cup (200g) pearl barley
- 3 cups (720ml) low-sodium beef broth
- 2 carrots, diced
- 1 onion, diced
- 2 cups (140g) sliced mushrooms
- 1 tbsp olive oil
- 2 tsp Italian herbs
- 2 cups (60g) kale, chopped
Method
- Brown beef in olive oil over medium-high, then remove and set aside.
- Saute onion, carrots and mushrooms 5 min, add barley, herbs and broth.
- Cover and simmer 30-35 min until barley is tender and liquid absorbed.
- Stir beef and kale back in and cook 3 min until kale wilts.
