Ingredients

- 1.25 lb (560g) 93% lean ground turkey
- 2 medium sweet potatoes (about 500g), diced small
- 1 yellow onion, diced
- 1 red bell pepper, diced
- 2 tbsp olive oil
- 2 tsp smoked paprika
- 1 tsp ground cumin
- 1 tsp salt
- 2 cups (60g) baby spinach
Method
- Heat olive oil in a large skillet over medium. Cook diced sweet potato 8-10 min until nearly tender.
- Add onion and pepper, cook 4 min, then push to the side and brown the turkey, breaking it up.
- Stir in paprika, cumin and salt; cook 3 min until turkey is cooked through.
- Fold in spinach until wilted and divide into 4 bowls.
