Ingredients

- 1.25 lb (560g) chicken breast, cubed
- 0.25 cup (60ml) buffalo hot sauce
- 1 tsp olive oil
- 8 cups (280g) chopped romaine
- 2 carrots, shredded
- 2 celery stalks, sliced
- 0.5 cup (120g) Greek yogurt ranch dressing
- 0.33 cup (40g) crumbled blue cheese
- 0.5 cup (75g) cherry tomatoes, halved
Method
- Saute chicken in olive oil over medium-high 6-8 min until cooked through, then toss with buffalo sauce.
- Build salad with romaine, carrots, celery and tomatoes.
- Top with buffalo chicken and crumbled blue cheese.
- Drizzle with Greek yogurt ranch just before eating.
