Ingredients

- 1.25 lb (560g) raw shrimp, peeled and deveined
- 1 cup (185g) dry long-grain rice
- 1 green bell pepper, diced
- 1 onion, diced
- 2 celery stalks, diced
- 1 tbsp olive oil
- 2 tsp Cajun seasoning
- 2 cups (480ml) low-sodium chicken broth
- 2 green onions, sliced
Method
- Saute onion, pepper and celery in olive oil 5 min until soft.
- Add rice, 1 tsp Cajun seasoning and broth; cover and simmer 15-18 min until rice is tender.
- Toss shrimp with remaining Cajun seasoning and stir into the rice; cook 4-5 min until pink.
- Fold in green onions and season to taste.
