- 1 cup (30g) spinach
- 1 tsp olive oil
- 1 tbsp chopped chives
- 1/4 tsp salt
- pinch black pepper
Method
- Whisk eggs with cottage cheese, salt, and pepper until combined.
- Heat oil over medium-low and wilt the spinach for 1 min.
- Pour in the egg mixture and gently fold until just set and creamy, about 2-3 min.
- Top with chives and serve.
