- 8 large eggs
- 1 cup (90g) chopped spinach
- 1/2 cup (75g) diced bell pepper
- 1/3 cup (50g) crumbled feta
- 2 tbsp chopped green onion
- 1/4 tsp salt
- 1/4 tsp black pepper

Method
- Preheat oven to 375F (190C) and spray a 12-cup muffin tin.
- Whisk eggs with salt and pepper, then stir in spinach, bell pepper, feta, and green onion.
- Divide evenly among 12 cups (about 3/4 full).
- Bake 18-22 minutes until set and puffed. Cool 5 minutes before removing.
