Ingredients

- 7 oz (200g) firm tofu, drained
- 1 tsp olive oil
- 1/2 cup (45g) chopped spinach
- 1/4 cup (40g) diced onion
- 2 tbsp nutritional yeast
- 1/4 tsp turmeric
- 1/4 tsp garlic powder
- 1/4 tsp salt
- pinch black salt (kala namak) for eggy flavor, optional
Method
- Crumble tofu with your hands into rough chunks.
- Heat oil over medium and saute onion 2-3 min until soft.
- Add tofu, turmeric, garlic powder, and salt; cook 5 min, stirring.
- Stir in spinach and nutritional yeast; cook 1-2 min until wilted. Finish with black salt if using.
